Nourishing noodle bowl
- bowl 1 cup buckwheat noodles, cooked,
- 2 cups mixed vegetables (carrot, zucchini, snow peas),
- 1 cup kale, sesame seeds, shallots, sliced.
- Add protein of choice - chicken, tempe, chickpeas or grilled fish.
- Dressing 2 tbsp tahini,
- 1 tsp miso paste,
- 1/4 tsp crushed garlic, lemon juice / white rice vinegar.
Blanch vegetables and let cool. Add to noodles in a bowl. Combine dressing and coat well. Top with protein, shallots and sesame.
