Nourishing noodle bowl


  • bowl 1 cup buckwheat noodles, cooked,
  • 2 cups mixed vegetables (carrot, zucchini, snow peas),
  • 1 cup kale, sesame seeds, shallots, sliced.
  • Add protein of choice – chicken, tempe, chickpeas or grilled fish.
  • Dressing 2 tbsp tahini,
  • 1 tsp miso paste,
  • 1/4 tsp crushed garlic, lemon juice / white rice vinegar.


  • Blanch vegetables and let cool. Add to noodles in a bowl. Combine dressing and coat well. Top with protein, shallots and sesame.
