Smokey BBQ Tender Jack with Sweet Potato

Ingredients:

  • 1 packet Amazonia Tender Jack Smokey BBQ
  • Wholemeal buns or bread of choice
  • 3 lettuce leaves
  • 1 avocado, sliced
  • 1 tomato sliced
  • 1 piece red pepper
  • 1 piece of yellow pepper
  • Vegan Mayonnaise
  • 1 sweet potato

 

How to prepare:

  1. Cook Jackfruit as per instructions on package. Remove and set aside. Sweet potato
    wedges.
  2. Season with salt, pepper and herbs if desired.
  3. Bake in oven for 180C for approximately 40 minutes or until cooked through
    assembly.
  4. Heat up buns
  5. Layer with lettuce, tomato, cucumber, Tender Jack and avocado
  6. Layer with sauce, and bun top to serve. Enjoy with baked sweet potato wedges!
